Pouzols-Minervois is a small but charming village in the Aude department in the south of France, in the Languedoc-Roussillon area of the Occitanie region. Out of just over 500 residents, a staggering 138 people are registered as wine producers. Much of this done through the local wine cooperative with the nearby village of Mailhac, which produces very enjoyable red, white and rosé wines. A short walk from Le Fort across the D5 is Pizza Loreggia, a roadside shack that serves terrific value for money pizzas and local wines. The farmers market on Saturday mornings offer fresh seafood, snails, preserves and local produce as well as local wines. There are lots of excellent bars, restaurants and shops in the surrounding towns and villages.

Around 1200 a ring of local fortresses was constructed by the Cathars in the area around Pouzols-Minervois for protection against the Papal forces. Much of the fortress in Pouzols-Minervois was rebuilt in the 16th century. At Le Fort Pouzols-Minervois, the spiral staircases, shared courtyard and 1.5 metre (5 ft) thick walls vividly recall the property’s past.
In essence, Pouzols-Minervois is a typical fortified medieval village. The ancient hospital (built in 1142) used to look after the old and infirm, including those on their way to Santiago de Compostella along the Camine Romieu, the pilgrim route to both Rome and Santiago de Compostella in Spain. The Romanesque church of Saint Saturnin has 11th century origins.
